Poki Poki Eggplant coconut milk typical of Gorontalo



Ingredients

  1. 3 pcs Poki2 (eggplant)

  2. 250 ml thick coconut milk

  3. 10 pcs red cayenne pepper

  4. 4 pcs red onion

  5. 1 pc garlic

  6. 1 knuckle of ginger (me: red ginger)

  7. 2 knuckle of turmeric

  8. 2 pcs of candlenut

  9. 1 bunch of basil, take the leaves, wash clean

  10. 1 lemongrass stalk, crush

  11. 1 pandan leaf, conclude with

  12. sufficient cooking oil

Step

1. Wash the poki2 (eggplant), cut 2 then split into 4 parts (me: soaked with spa water does not turn black), wash again, drain, then fry, set aside

2. Puree the chilies, onion, garlic, ginger, turmeric, candlenut (me: blender)

3. Heat the pan, saute the spices until wilted or until the spices are fragrant, add the lemongrass and pandan leaves

4. Add coconut milk, stir constantly Spicy coconut milk doesn't break, then add salt and sugar, stir again & taste correction, cook until done or until thickened

5. After that, add basil leaves, fried eggplant (eggplant) and don't stir until everything is well mixed, turn off the stove, remove and serve...
