Betawi Typical Ulam Rice Recipe



Ingredients:

  • 1 liter of rice (cleaned)

  • 1 liter of water 1

  • lemongrass stalk that has been crushed

  • 2 cm galangal that has been crushed

  • 2 bay leaves that have been cleaned with

  • salt 1 teaspoon of

serundeng ingredients:

  • 250 grams of grated coconut

  • cumin 1/4 teaspoon of

  • red chili 2 pieces ( puree )

  • salt 1/2 teaspoon

  • oil for frying 5 tablespoons of

  • brown sugar that is combed 1 tablespoon

  • 1 lemongrass stalks crushed

  • grilled shrimp paste 1/2 teaspoon

  • red onion 4 grains ( puree )

  • garlic 1 clove ( puree )

  • coriander powder 1/2 teaspoon

How to Make Complete Ulam Rice :

a. make rice:

  1. Steam the rice in the steamer for 20 minutes.

  2. Remove and then flush with hot water and stir with the lemon grass, salt, bay leaf and galangal.

  3. Stir constantly until evenly distributed and the water is absorbed.

  4. Steam again until cooked for 25 minutes, remove and set aside for a moment

b. make serundeng:

  1. Saute ground spices with a little oil then all the other spices, mix well

  2. Enter the prepared coconut belly and stir again until cooked and yellowish

  3. Place the cooked rice on a serving plate then sprinkle with serundeng on top

  4. Nasi ulam is ready to be served
